EdibleIndy highlights Cunningham Restaurant Group's Farm-to-Table approach

Cunningham Restaurant Group (CRG) has elevated the “Farm to Table” experience with its hydroponic farming initiative, CRG Grow. Established in 2016, the USDA-certified greenhouse provides a sustainable supply of fresh greens, herbs, and vegetables to restaurants like Vida and Modita, where living hydroponic towers are prominently featured. These towers allow chefs to harvest fresh produce directly for their dishes, adding vibrant flavors and garnishes.

CRG Grow’s sustainable practices include organic pest control and water purification. Additionally, the greenhouse hosts private, immersive dining events, allowing guests to enjoy dishes prepared from the surrounding hydroponic towers.
